Deviled Mice

Ingredients:
8 Hard Boiled Eggs, cooled and shelled
4 Tablespoons Mayonnaise
Lettuce Leaves
Pimiento-stuffed Green Olives
Chocolate Sprinkles
Toothpicks
Directions:
On a large plate, lay out lettuce
leaves and put aside.
Remove the Pimento from the olives, cutting each
Pimento into three pieces (nose and eyes). Slice the olives the long way into 32 thin slices (tails).
Cut 32 triangular pieces of green olives (ears).
Slice each peeled egg in half lengthwise.
Remove the yolks and place in a small bowl to
make an egg salad mixture.
Using a fork, mash yolks till pulpy, add Mayonnaise
and continue to mash/stir till well blended.
Gently fill each egg white half with the yolk
mixture and using a butter knife, scrape away any yolk
mixture that is on the white part.
Place the egg halves – yolk side down – onto
the lettuce leaves.
These are the bodies ready to be made into mice.
Insert one Pimento piece at the edge of the pointy
part of the egg, and add two Pimento pieces for the
eyes above the nose.
Use a slice of green olive for the tail.
Use two triangle olive pieces for the ears and
insert into the egg white after using a paring knife
to make a small slit.
Between the eyes and the nose, insert two toothpicks
on each side of the mouse face (whiskers).
In between the “egg mice”, put tiny heaps of
chocolate sprinkles (mice poop).
